Behind the scenes with Chef Ido at HaKatan

Ido is a part of the new age chefs in Israel, and a well known name in the industry. With a heavy focus on fermentations, garums and other preservation methods, I was lucky enough to get a sneak peak into what goes on behind the scenes of the one of the smaller refined kitchens in town.
